    Today I’m going to share with you this simple and delicious gluten free corn dog bites recipe.

    Corn dogs remind me of the fair and eating cotton candy, eating a bunch of junk food and having good times with friends.

    Unfortunately I’ll probably never have another corn dog at the fair again but with this recipe I can have my mini gluten free corn dogs and relive those same memories.

    The batter for these mini corn dog bites is really simple and can easily be made dairy free.

    The only ingredients are

    Coconut oil or butter (or any other oil)

    Honey

    Eggs

    Baking soda

    Salt

    Coconut flour

    Almond flour

    And don’t worry there’s no weird after taste or gritty texture.

    These gluten free corn dog bites taste just like a regular corn dog.

    Serving Size: 20-24

    Ingredients

    • 1/4 cup melted coconut oil or butter
    • 3 eggs
    • 2 Tablespoons honey
    • 1/4 cup almond flour, firmly packed
    • 2 Tablespoons coconut flour, firmly packed
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon kosher salt
    • 4 hot dogs (cut in 1/2 inch pieces)

    Instructions

    1. Preheat oven to 325.
    2. Whisk together melted coconut oil, eggs and honey.
    3. Stir in dry ingredients.
    4. Scoop into greased mini muffin pans, 1 tablespoon of batter in each.
    5. Place 1 hot dog piece in each muffin.
    6. Bake for 14-17 minutes, until golden brown.
    7. Serve warm

    Notes

    *Can be reheated in the microwave for 15 seconds.

      Andrew you made my day! I almost did not open email because I cannot eat corn. Then I decided to anyway just for the heck of it and you made my day! These look delicious! OMG how fun. There is a really clean organic hot dog called Applegate Farms Organic. Not nitrates and only 8 grams of fat. They are delicious. Probably a bit thinner than Nathans but have less chemicals in them and better for you. Just FYI! Thanks again! We are having these soon!

        Applegate are good too, I just prefer the taste of Nathan dogs.

      My nephew has a nut allergy. So almond flour is out of the question. Can rice flour be used instead? If not, what other GF flour do you suggest?

        This recipe will only work with almond flour.

          Well I found out that un-roasted, unsalted sunflower seed flour is a good substitute for almond flour as it is the exact same texture and consistency. Moreover, sunflower seeds have a mild flavour and so the flour will be light and will not overpower other flavours.

      Really enjoyed these. Used coconut oil first. Tasted good, but more like a coconut dog than corn dog. Second time, subbed applesauce in place of oil and it has become my new batter for all kinds of stuffed muffins treats. I’m guessing butter would be the best fat to use for true corn dog style, but this by far is the best gluten and dairy free batter I have tried! Not to mention easiest! Big thanks!

      This recipes worked great for me! I used them for a birthday party. As a tip, I used a ruler and a small ice cream scooper. These tools made them easier to make, and gave me exact numbers since I made a lot!
